Tuscan Chicken Maryland

Chicken maryland (thigh and drumstick together) seasoned with chives, oregano and rosemary. The herbs work into the meat as it roasts, and the skin crisps up. Roast at 180°C for 40-50 minutes until golden, or slow-cook until it falls off the bone. Finish with olive oil and a squeeze of lemon. Price is per kilo.
