Butterflied Thai Chicken

A free-range chicken, butterflied and marinated in lemongrass, garlic, ginger and lime. Flattening the bird means it cooks faster and more evenly, and the skin crisps up nicely. Roast it or cook it on the barbecue and serve with jasmine rice and fresh herbs.

• Roast at 200°C for 20–25 minutes, or sear over medium-high heat for 4–5 minutes per side
