Butterflied Chimichurri Chicken

A free-range chicken, butterflied and marinated in chimichurri: parsley, garlic, red onion, oregano and vinegar. It's tangy and herby, and because the bird lies flat it roasts evenly and takes well to the barbecue. Serve with crispy potatoes or a salad.

• Roast at 200°C for 40–50 minutes, or grill over medium heat for 6–7 minutes per side until cooked through
